These lentil bolognese lettuce boats are great if you are looking for a healthy, low calorie dinner that is quick and easy to make. Great to make for guests too as they look lovely.
Lentil Bolognese Lettuce Boats

Approx 250 calories and 7.4g protein per serving
1 tbsp Oil
1 Onion – chopped
2 Garlic cloves – chopped
1 Red pepper – chopped
1 Sweet potato – chopped
2 tbsp Tomato puree
2 Tins of chopped tomatoes
1 Tin of black beans
50g Red split lentils
Spices – pinch of s&p, paprika, oregano
Cos lettuce leaves
1 Avocado – chopped
Green chilli – chopped
Creme Fraiche – couple of dollops
1 Spring onion
Heat the oil on a medium heat and add the onion and garlic, cook until translucent then add the pepper. I add the spices at this point to coat the veggies. Add the tomato puree and give it a good stir, let this cook for 3-5 mins until everything is soft.
Then basically you want to add everything else, the black beans, sweet potato, chopped tomatoes, lentils and I also add in about 50ml of water here too.
Let this cook on a medium to high heat for around 20 mins and make sure you stir occasionally.
While that is cooking, wash and prep the lettuce and chop up the avocado, chilli and spring onion.
Spoon the bolognese on to the lettuce and top with the avocado, chilli, spring onion, a dash of lemon juice and some creme fraiche.
This is such a versatile bolognese, add your favorite beans, spices and you can serve on pasta if you fancy it.
This is a lovely, super healthy veggie dish and you can take away the creme fraiche to make it vegan or add meat if thats what you like.
