I think this week I’ve stuffed more vegetables than ever before 😂
I do a weekly food plan and generally stick to it, I was supposed to be making a pasta bake but I really wasn’t feeling like a bloaty meal, as I’m already quite bloated and full of baby, so decided on something light and easy. I always seem to have sweet potatoes in my potato drawer, so I had a quick look in the fridge at what else we had that could go with them and came up with this yummy meal and it turned out good.
I stuffed sweet potatoes with halloumi, bacon and spinach. You could make these veggie, vegan and mix them up however you like they’re so versitile and quick to make.
Sweet potatoes filled with yum
Takes about 1 hour total prep+cook
Mix them up with your favourite filling
4 good sized sweet potatoes
Good handful of spinach
2 rashers of bacon
Pre-heat the oven to 180 and put the sweet potatoes in whole, cook for about 30 mins until they’re soft in the middle.
While they are cooking, prep your filling.
I cooked the bacon and chopped it up then grated the halloumi then added them both to a bowl.
Once the sweet potatoes are done, slice them in half and scoop out about 2/3 of the filling and add to your mixture. Mush it all together with some seasoning, I used smoked salt from Cyprus 😋
Pile on generous amounts to the skins and pop them back in the oven for 10mins or so.

You can get really creative with your filling, add whatever you fancy.
They can even be a side dish to another meal.
